What is Swamp Cabbage?

It is a local way to honor the official state tree, the sabal (cabbage) palm, by eating it. Swamp cabbage is an old-time Florida cracker favorite vegetable obtained from the heart of the cabbage palm The plant is known by such other names as palmetto palm, sabal palm, and swamp cabbage tree. The heart of the cabbage palm is prepared into swamp cabbage or fritters  and the focus of the of the contest.
